Heavenly spinach and artichoke stuffed portebello mushrooms


I have a weakness for all things spinach, artichoke or mushroom, I created this recipe after many failed attempts to find the perfect stuffed mushroom. The key to the success of this recipe is to remove the ribs before grilling. That will eliminate the amount of water left in the mushroom, leaving you with the perfect grilled mushroom! The filling also makes a great chip dip, just top with a cheese and bake until bubbly! I would love to hear your feedback on this recipe. Enjoy! I served these fabulous stuffed mushrooms with bone in pork chops seasoned with sweet heat (by sauce goddess http://saucegoddess.com/), garlic powder and minced onions.

Serves 2

Spinach and artichoke filling:
1/8 c. sour cream
1/4 c. Cream cheese
1/8 c. mayo
1 jar artichokes in brine
1/4+\-  parmigiana reggianato cheese(to taste)
 1/4 +\- fresh grated mozzarella cheese(to taste)
1/4 c. Red onion, diced 
1 1/2 tsp  minced garlic
1/2 tsp red pepper flakes
1/2 bag of fresh spinach

In medium sized bowl mix; sour cream, cream cheese and mayo. Beat until smooth. Add in onions and minced garlic, mozzarella and parmesan cheese  stir until well mixed. Spice with black and red pepper. Add a handful of spinach at time , stir until coated. Repeat until about half of the bag is mixed in(or to your liking) make sure there is not to much sauce to the amount of spinach, gently stir in artichokes being careful not to crush them to bits, spoon into a shallow baking dish. Store covered in the fridge until ready to bake. preheat oven to 400 and bake until bubbly, keep warm in the oven while your mushrooms are cooking.

Preparing the mushrooms:
2 large portobello mushrooms steam, ribs removed (I used a zester)
Olive oil
Dash salt
Fresh ground pepper
Garlic powder

Brush off the portobello mushrooms with paper towel, de rib the inside of the mushroom ( I used a zester to scrape it clean). When ready to grill(350 degrees), spray mushrooms with olive oil. Dust with salt, pepper and garlic powder.

Grill until just soft with a firm center, starting with the cap face down on the grill. Dump any water that collects in the cap. When done, stuff the mushrooms with the spinach artichoke filling and top with a bit off shredded Parmesan cheese. Broil until golden and serve. (you are not baking them just melting the cheese on top, the filling should already be warm when stuffing your mushroom.)

Lets do this!

My mind has been a bit blank for the last few weeks, I have been consumed with the thoughts of life, love, family and the decisions that come behind holding it all together. I have been working extra hard on a few products that I have developed for the gluten free community, and hope to have them selling in the local shops like hotcakes(gluten free hotcakes?). My husband has provided, and provided and provided. I want to give him the chance to be provided for, I have been saying it for years. No fabulous thoughts or ideas would have allowed me to do so, Until now! I have a real gem and can't wait to get all of my fabulous ideas on the table. How wonderful would it be to be a second provider for our family? Sure I cut coupons and try to pinch pennies, but to pay off a mortgage or a credit card would be a dream come true. And the stress of it all is worth it all! You are about to embark on the journey of a self made millionaire, hold on to your hats friends! Lets do this!

PHOENIX GLUTEN FREE FOOD EXPO



Im very excited to be going to Phoenix this year for the Gluten Free Expo. Last year my husband and I attended the event in our hometown, learning about new products and companies. An additional plus is that i get to drag him away from work for a weekend. As busy as he is now this seems to be more important to both of us. Review: I decided that since my husband has gone through a few boxes of these, that he should be the one to review the product. These are a great on the go snack, something to ward off hunger pains. They do have a cardboard like flavor, but a bit better than other GF snack contenders. The price is expensive for 5 small bars, so these are not something we keep in the house. They also come in a few differant flavors.

Review: Although the instructions for this item suggest adding an egg to the dish, we did not. The noodles were very good not to tough or gummy for my taste, we cooked them just like the package read. The Thai sauce has something to be desired, it has a very "packaged" taste and was very bland. This kit would serve as something to fill your belly with as a last minute meal. (Although somehow our 15 minute meal turned into work... peeling, de-vaining, and grilling the shrimp always takes precious time.) I would suggest purchasing the rice noodles that Thai Kitchen has to offer, they are simply prepared and have a great texture!

Review:
These Nature Valley bars have made a place in our home and tummy's, great for a snack or breakfast on the run! I carry one in my purse at all times to ensure that we always have something GF within reach, that is satisfying. There is just no replacement for something sweet and crunchy and this will fulfill those cravings. Even those of us not following a GF diet will enjoy them!
