There are several recipes of my mothers that I would love to recreate to serve our gluten free household. One of them being chicken spaghetti... which will be on the to do list and is an entirely new subject! Im not even sure what she called this dynamo dish, but it finds it's way into my cravings fairly often. It is full of sliced zucchini, stringy cheese, tomatoes and whatever else needs to be used in the fridge. It is an easy way to throw veggies into your weekly menu's and the beautiful colors of yellow and green zucchini surrounded by the red of ripe tomatoes is sure to entice the pickiest of eaters. I would like you to think of my concoctions as a building block, take what you have read a put your own spin on it. Add GF macaroni noodles and sausage to make a complete meal or mushrooms and lean ground turkey for a savory spaghetti sauce. Sometimes I go southern style and add corn, black beans and cheddar cheese. I would love to hear any and all renditions of this recipe!
This is my latest creation, served along side a medium rare venison steak and green salad.
Roasted zucchini with tomatoes and goat cheese
2 Fresh zucchinis or yellow squash chopped, sliced or diced
1 Can GF diced tomatoes ( if you have fresh tomatoes on hand add chicken or vegetable stock)
1 Yellow onion sliced
2 tsp butter
2 Tbs olive oil
2 tsp Minced garlic
1 tsp Parsley
1 1/2 tsp Oregano
1 tsp Basil
Pepper
Sea Salt
1 oz Goat cheese (or more to taste)
1/4 C. Mozzarella cheese
1/4 C. Mozzarella cheese
Add butter and garlic to a large pan, when fragrant add the
sliced onion and sauté until just soft. Add the tomatoes and spices; simmer
until reduced by 3/4.
While reducing tomato mixture:
Toss zucchini in olive oil, then evenly spread on cookie sheet ( I like to line mine with parchment paper) salt and pepper. Roast in oven until desired doneness ( I like mine a bit shy of crunchy). Keep a close eye as they will cook quickly.
Just before serving stir in goat cheese, add zucchini to tomato mixture and top with shredded mozzarella cheese. Try to time them together, adjusting temperatures if needed.
